While my younger sister was at work at a local restaurant during this past holiday break, I decided to make one of her favorites to come home to as a little surprise. Broccoli Cheddar Soup that is, and a good choice for this chilly time of year. Thanks to The Blond Cook I found a recipe a little less fat filled (since the holidays had given us plenty ) of this cheesy goodness. I even only used a couple of tablespoons of butter to sautee the onion, making it a bit “skinnier” still and it wasn’t any less tasty than others I’ve had.
Some apple slices on the side and it was a meal.
